Breakfast with a Difference
PASSION FRUIT SUGAR MUFFINS
I am always looking for new and different ideas. I decided to try something different for breakfast. I was inspired by a recipe in a Marie Claire cookbook. Passion fruit Sugar Muffins.Since becoming a mum, I am interested in quick delicious recipes.
Note: Passion fruit curd can be purchased at The Butlers Pantry http://www.thebutlerspantry.ie/ or Avocahttp://www.avoca.ie/home/ . If you don't have passion fruit curd you can use Lemon Curd you can get this from your local butcher or supermarket.
Recipe as follows: MAKES 12 MUFFINS
2 1/2 cups self-raising flour
1 1/2 cups caster sugar
1 1/2 cups buttermilk
2 eggs
1 teaspoon vanilla extract
250g butter melted and cooled
1/4 cup passion fruit curd
1 - 2 tablespoons lemon juice
Preheat oven to 190oC / 170oC Fan.
Lightly grease 12 muffin holes, sift flour into a bowl and stir in 1/2 cup of caster sugar. Make a well in the centre. Whisk together buttermilk. eggs and vanilla and 150g of the melted butter and pour into the well. Stir until just combined, the mixture should still be lumpy. Half fill each muffin hole with mixture then add a generous teaspoon of passion fruit curd and then top with the remaining mixture. Bake for 30 minutes or until risen and springy to touch. Miz the lemon juice and remaining butter in a bowl and spread the remaining sugar on a plate. brush the warm muffins with lemon butter and roll in the sugar. Serve and enjoy... Delish..
