Limoncello

Decided to make some Lemoncello for Christmas. Recipe as follows :

6 large lemons unwaxed
1 litre vodka
350ml water
450g sugar

Wash the lemons and remove peel with a peeler avoiding removing the white pith as this is bitter

Place zest and vodka in a sealed jar, close and leave to infuse for 2 weeks.

After 2 weeks bring the water and sugar to the boil and reduce to simmer for 5 minutes to make a sugar syrup. Strain the lemon infuses vodka, squeezing all liquid from the zest. Stir in sugar syrup and put into sterilised bottles. Seal well and freeze till required.
