Garlic Potatoes with a Salmon Suprise

I had some smoked salmon left over and I wanted to use it in a different way. I also had loads of potatoes in the cupboard so I decided to make these garlic potatoes. They are really rich and tasty.



Ingredients

3 - 4 Potatoes
1 carton double cream
3 garlic cloves crushed
butter for the top
salt and pepper


Method

1. Preheat oven to 180oC. Peel and thinly slice potatoes and cover with cold water. 
2. Grease baking dish with butter and scatter 1/3 of the garlic on the bottom and sides of the baking dish.
3. Dry potatoes with a kitchen towel or kitchen paper and start to layer potatoes in the baking dish. Drizzle cream over and season with salt pepper and garlic, then place smoked salmon over this, then the final layer then add another layer of potatoes, cream, salt pepper and dot with small pieces of butter.
4. Place baking dish in the oven and bake until golden brown and potatoes are cooked. Serve hot. Enjoy...

Variations

You could add slowly cooked onions in between potato layers. You can also add some parmesan to the top. Why I say parmesan is that it has a high heating point and wont burn. You can use other cheese maybe add 10 minutes before the dish is done.

N.B The thinnner the potatoes the quicker they will cook. I usually use a mandolin to slice the potatoes that way the slices are all even.
