Simple Apple & Blueberry Cake

225g self-raising flour sifted
165g caster sugar
125g unsalted butter softened
1 tsp vanilla extract
2 medium eggs
125ml milk
1 eating apple cored
and thinly sliced
1 x 250ml cup fresh or frozen blueberries (about 150g)
2 heaped tbsp demerara sugar

TO SERVE
vanilla ice cream


Preheat the oven to 160C fan/180C/gas 4. Place the flour, sugar, butter, vanilla, eggs and milk in the bowl of an electric mixer and beat until just combined.
Spoon the mixture into a greased 22cm springform tin lined with nonstick baking paper. Top with the apple and blueberries and sprinkle with sugar.
Bake for 45-50 minutes or until the cake is cooked when tested with a skewer. Serve with vanilla ice cream
